You might be like, “why is this photographer posting about chocolate chip cookies?”
And my response to that is: “why isn’t everyone talking about chocolate chip cookies?”
Back in 2020, the age of Covid, we were all trapped inside our homes (many of us with small children). I had a newborn at the time and a reasonable amount of postpartum anxiety. Cookies do not heal postpartum anxiety, but, I mean, it doesn’t make it worse.
I spent a lot of time that year asking myself what was required to make the PERFECT chocolate chip cookie. I am a big fan of Baker By Nature – everything I’ve ever made from this blog has been 10/10. But I think her everyday chocolate chip cookie recipe takes the cake (pun intended).
Before you jump to her website, let me tell you WHY these are so amazing.
Browned butter
You ever go to make cookies and realize you never pulled the butter out of the fridge? Happens every time. I love that this recipe uses browned butter, because I can melt it all the way, straight from the fridge. Yes, you do have to wait for it to come to room temp – it’s an extra step, but I truly believe it’s worth it. There’s a depth of flavor that is *chef’s kiss*
Variation of chocolate
I have no room in my life for milk chocolate. It’s a hard stance, but I take it. If you are not a dark chocolate kind of human, do whatever feels right for you. For ME, I use a mix of dark and semi-sweet chocolate. BUT, the magic comes with a mix of chocolate bar and chocolate chips. My favorite combination is using a 72% dark chocolate bar from Trader Joe’s (my fave), and semi-sweet chocolate chips. I can’t explain it, I just swear by it. Maybe your kids don’t like dark chocolate? Seems like a bonus to me.
Slightly undercooked
Whatever you do, for the love of God, do not over-bake your cookies. When the edges look done, pull those babies out and leave them on the baking sheet for 10 minutes. Then, pour yourself a big ol glass of milk and eat them warm. I like to freeze the cookie dough in individual balls so I can pull out a few at a time and bake them fresh.
Extra chocolate on top
I love this tip from Baker by Nature! When your cookies come out of the oven and are still hot, gently press some extra chocolate chips onto the top. It makes them extra pretty and more chocolatey.
